ginger peanut tofu salad

this is one of joe's favorites.  i generally prefer not to have it, but i would feel guilty hiding the recipe for him, so i still get the ingredients for it occasionally.  the recipe is from the mercy for animals website.

more stir-fried pasta

iron

who doesn't love a tofu scramble out of a new cast iron pan?

summer grilling

last week we tested out our house's grill with dave and some vegan dogs and burgers.  the $4 veggie rack was a worthwhile purchase at meijer, but the eco-goo lighting gel was interesting.

market day

i was pleased to find out that there is a great reward for biking to the farmer's market on a warm saturday morning. it includes strawberries and avocado reubens (and a pound of lovely asparagus to enjoy later).

all it takes is some vegan thousand island with sauerkraut and sliced avocado (having an awesome cast iron sandwich press doesn't hurt, either)

country hermitage

after a great wedding with a vegan feast, joe and i headed up to the country hermitage b&b in traverse city.  not only were we the only ones staying for the weekend, we were treated to fabulous vegan breakfasts both mornings.

day one
fruit parfait with apples, kiwi, walnuts, dried fruits, in a sweet glaze topped with vanilla soy yogurt and cranberry granola

fluffy blueberry pancakes with soy sausage and melon

day two
vanilla soy and banana smoothie that tasted like liquified banana bread (in the best possible way)

pan-fried tofu topped with portobellos and bell peppers with hash browns and warm cornbread muffins
